Balsamic Roasted Veggies

1 zucchini, thick sliced
1 yellow squash, thick sliced
3 c. broccoli florets
1 red onion, diced
1 each red, green and yellow bell pepper, diced
1/2 c. olive oil
1/4 c. balsamic vinegar
1 tsp salt
1 tsp pepper

Mix olive oil with vinegar and salt and pepper. Mix very well with a whisk. Toss mixture with veggies. Bake at 400 degrees for 10-15 minutes or until tender. Serves 6.
